All of a sudden, my character turns into a Futa. I can change it back in Settings, but when midnight rolls around, he changes back. Any idea what might be causing this?

Nope. If'n I remember correctly, that has to do with their stats and fetishes. Which with the exception of Special Characters are randomly generated.

I think that's the point where you need to break into her house using your lockpicking skill (assuming you've unlocked that).
